Blackberry Cobbler
4 cups fresh blackberries
1/4 cup flour
1 3/4 cup sugar
1/2 teaspoon salt
1 teaspoon cinnamon
juice of 1/2 a lemon
1 cup packaged biscuit mix
2 tablespoons sugar
1/2 cup milk or water
1 1/2 teaspoons sugar
Butter an 8x8 baking pan. Mix blackberries, flour, sugar, salt, cinnamon
and lemon juice. Pour into baking dish. Dot with butter.
Mix biscuit mix, 2 tablespoons sugar and milk or water. Pour over fruit
mixture. Top with 1 1/2 teaspoon sugar. Bake at 425 F uncovered for 40
minutes or until golden brown.
